Now Brewing Coffee from Bukidnon
Toby’s Estate celebrates a Filipino coffee producer with a limited batch of coffees grown on the slopes of Mt. Kalatungan in Bukidnon.
Thriving amidst days embraced in dense mist and constant rainfall, these coffees are nurtured on the slopes of one of the highest mountains in the Philippines and are cared for with reverence by the Talaan-dig people who have been growing coffee for generations under tall trees on the edge of forests. During a six month harvest season, farmers bring wine red Arabica cherries to the Ephemera Traders micro mill at the center of the Talaan-dig ancestral domain for careful processing and drying – a relationship that encourages the farmers and the mill to produce one of the best coffees in the country today.
These coffees are an assortment of Arabica cultivars (mostly Typicas) growing wild in a handful of small farms across two barangays in the Talaan-dig community. Of its approachable characteristics are a pronounced yet comfortable acidity, a creamy body and a lingering cocoa powder finish. Its dense sweetness teases at your memories of nibbling on unrefined sugar or eating raw honey from a teaspoon.
